Tequila & Mezcal are spirits, made from agave. Mezcal can be made from a wide variety of agave whereas tequila must be made from only the blue agave or “agave tequilana” from where the drink gets its name. Tequila is produced in the area surrounding the city of the same name, and in the Mexican highlands. The fermented juices are distilled, usually twice, though sometimes three times and Tequila is often barrel-aged. This helps to develop the flavours and aromas of the drink.
