Old Tom was popular in the 18th Century as the original gin recipes were sweetened to make it more palatable. Its name purportedly came from the wooden plaques shaped like a black cat. Old Tom Gin is now making a resurgence being a slightly sweeter gin which makes for great drinking in a G&T or great in cocktails such as a Tom Collins.
