Generally, the colour of the Rum depends on the length of time it has spent ageing. Golden Rum is lighter having spent several years ageing whilst Dark Rum will have spent longer in this process. Rum is often aged in bourbon or sherry barrels which extract a sweety, sherry, toasted vanilla flavour to the rum. Try Skipper or Goslings for dark rum or The Duppy Share, Flor De Cana or Chairman's reserve for golden rum..
